Method
Step 1 of 7
Take one thin slice of beef and one portion of enoki mushroom, roll it up and rest it opening side facing down.

In a bowl, mix dashi stock, soy sauce, mirin, sugar, and black pepper.
Step 3 of 7
Drizzle oil in a pan, and add onions. Turn the heat to medium-high and pan-fry for 3-4 minutes or until the onion is slightly translucent and soft.
Step 4 of 7
Place the sliced beef on top of the onion, drizzle in the sauce, put the lid on, and let it cook for 3 minutes.
Step 5 of 7
Remove the lid, turn the beef, and depending on the cut/thickness of the beef, you may need to cook another 1-2 minutes.
Step 6 of 7
Drizzle the egg all over the pan onto the sauce, and simmer for another 2-3 minutes.
Step 7 of 7
Garnish with green onion, and enjoy with rice!

1) 2 packs of 350g large green Asparagus (about 15 - 20 spears)
2) 1 pack of @nimanranch Maple Uncured Bacon or Gourmet Chef Streaky Beef Bacon
3) Salt
4) Black Pepper
5) Olive Oil
 Dipping Sauce:
1) ½ cup Mayonnaise
2) 3 tsp @tabasco Garlic Pepper Sauce
3) 1 tbsp Fresh Lime Juice
4) 1 tbsp & 1 ½ tsp Finely Chopped Fresh Cilantro (finely chopped)
