Method
Step 1 of 8
Mix blueberries, sugar, corn starch, lemon juice and zest and salt in a bowl.

Lay out the pastry dough and place the blueberry mixture in the middle.
Step 3 of 8
Fold the pastry over the fruit.
Step 4 of 8
Brush the pastry with egg wash, then sprinkle with sugar.
Step 5 of 8
Bake at 200°C for 30-40 minutes, or until the crust is golden brown.

Remove carefully from the oven and let cool completely.

Top with thyme and some edible flowers.

A French Pastry filled with fresh Blueberries
Ingredients
1) Puff Pastry Dough (you can use pie dough as well)
2) 2 cups of Blueberries
3) 1/3 cup Sugar
4) 1 tbsp Corn Starch
5) ½ Lemon (juice and zest)
6) Pinch of Salt
7) 1 egg (for egg wash)
8) 2 tbsp Raw Sugar (for sprinkling)
9) Edible Flowers (for decorating)
10) Fresh Thyme Sprigs (for garnishing)
