Prep Work
Step 1 of 4
Soak Peach Gum overnight or up to 12 hours.
Step 2 of 4
Rinse the red dates, lotus seeds, dried longan and goji berries with clean water before using.

Use a small knife to pry open the lotus seeds and remove the seed core in the middle. Soak the seeds in hot boiling water while you prepare the other ingredients.

Soak the dried snow fungus in warm water until soft and plump. Once softened, trim off the dark yellowish edge on the bottom.
Cooking
Step 1 of 5
Add the prepped snow fungus, red dates, lotus seeds, longan into a slow cooker, fill up the remainder of the pot with water and set timer to 3 and a half hours on medium-low heat.

Once everything has softened, add rock sugar and stir until completely melted.
Step 3 of 5
Add the peach gums and let them simmer for another 10 minutes.
Step 4 of 5
Once you are happy with the level of sweetness, add the goji berries, turn off the heat. The residual heat will soften the goji berries. You don't want to overcook goji berries as they will turn sour.
Step 5 of 5
You're done - this homemade dessert is best served warm.
